Pork Chops with Creamy Mustard Sauce

Ingredients:

  • 4 pork chops (1-1.5 inches thick)
  • Beef tallow
  • Heavy cream
  • Dijon mustard
  • garlic
  • 4 pads butter
  • 1/2 C chicken broth

Directions:

  1. Season pork chops generously with salt and pepper
  2. Heat beef tallow in hot skillet, then add chops
  3. Cook on first side for 4-6 minutes until golden brown; turn over and cook an additional 3-5 minutes depending on thickness
  4. Remove pork chops to platter to rest, meanwhile create the sauce
  5. Add to the skillet heavy cream, scraping the pan to collect the crispy crumbs
  6. Add Dijon mustard, garlic, butter and chicken both and stir until thickened
  7. Replace pork chops to skillet and let simmer until sauce fully thickens
