Creamy Spinach and Mushroom Pork Chops with Swede and Parsnip Mash

Ingredients:

  • 4 pork chops
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 cup mushrooms (sliced)
  • 1 cup fresh spinach
  • 3 cloves garlic (minced)
  • ½ tsp paprika
  • Salt & pepper to taste

Directions:

  1. Season pork chops with salt, pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat and sear pork chops for 3-4 minutes per side. Remove and set aside.
  3. In the same pan, sauté mushrooms and garlic until softened.
  4. Add heavy cream, chicken broth, and spinach. Simmer for 2-3 minutes.
  5. Return pork chops to the pan and cook for another 5 minutes, letting them absorb the sauce.
  6. Serve hot, garnished with extra spinach if desired.
