Curry Chicken Soup

Ingredients:

  • 1 lb. chicken breast or thighs (chopped into chunks)
  • Butter ghee (clarified butter)
  • Coconut milk (full fat)
  • 2 Tbs. fresh grated ginger
  • 2 Tbs. fresh grated or chopped garlic cloves
  • 1 Tbs. fish sauce
  • 1 large shallot, finely chopped
  • 2 Tbs. tomato paste
  • 1 fresh lime (juice for soup)
  • Salt and pepper to taste
  • Crushed red pepper to taste (optional)
  • Cilantro and lime for serving

Directions:

  1. In a large skillet, melt butter ghee on medium heat.
  2. Add chicken and brown in ghee until golden and almost cooked through.
  3. Add garlic, shallot, ginger, fish sauce, salt, pepper, tomato paste, and crushed red pepper if desired. Stir until well blended.
  4. Add the coconut milk and lime juice and bring soup to a simmer 10 minutes, stirring occasionally.

Serving:

  • Ladle soup into bowls and garnish with cilantro and sliced limes.
