Ingredients:
- 1 lb. chicken breast or thighs (chopped into chunks)
- Butter ghee (clarified butter)
- Coconut milk (full fat)
- 2 Tbs. fresh grated ginger
- 2 Tbs. fresh grated or chopped garlic cloves
- 1 Tbs. fish sauce
- 1 large shallot, finely chopped
- 2 Tbs. tomato paste
- 1 fresh lime (juice for soup)
- Salt and pepper to taste
- Crushed red pepper to taste (optional)
- Cilantro and lime for serving
Directions:
- In a large skillet, melt butter ghee on medium heat.
- Add chicken and brown in ghee until golden and almost cooked through.
- Add garlic, shallot, ginger, fish sauce, salt, pepper, tomato paste, and crushed red pepper if desired. Stir until well blended.
- Add the coconut milk and lime juice and bring soup to a simmer 10 minutes, stirring occasionally.
Serving:
- Ladle soup into bowls and garnish with cilantro and sliced limes.
