Ingredients:
- 4 pork chops (1-1.5 inches thick)
- Beef tallow
- Heavy cream
- Dijon mustard
- garlic
- 4 pads butter
- 1/2 C chicken broth
Directions:
- Season pork chops generously with salt and pepper
- Heat beef tallow in hot skillet, then add chops
- Cook on first side for 4-6 minutes until golden brown; turn over and cook an additional 3-5 minutes depending on thickness
- Remove pork chops to platter to rest, meanwhile create the sauce
- Add to the skillet heavy cream, scraping the pan to collect the crispy crumbs
- Add Dijon mustard, garlic, butter and chicken both and stir until thickened
- Replace pork chops to skillet and let simmer until sauce fully thickens
